If Neighbours give you Parsnips.......

........ Make soup!  Yesterday there was a knock at the door which, when opened, revealed one of my neighbours clutching two huge parsnips.  'A present', she said!  We had bought a few parsnips the day before but I didn't like to say we didn't need them so, of course,  I accepted them.

 Adding three of the smaller parsnips we had bought as well as an onion, Paul made a lovely soup  for lunch.
 
 It was warm and tasty on such a cold, wet and sleety day.  There is enough soup in the fridge for another day too.

 After lunch we made biscuits and cut them into heart shapes ready for Tuesday.

 They are cooling on the rack as I type this post

 A baker's dozen! They might need a bit of decoration, perhaps?  I'm sure a few of them will find their way next door to say thank you for the parsnips.

  3. I love parsnip soup, one of my regular standby's. Often on a Sunday I will chop up what ever is lingering in the veg box, sweat it in butter and then add stock and simmer. Quick whiz and lots of homemade veggie soup for the week. B x

  4. I don't really like parsnips BUT I like Parsnip soup! Weird eh?!?!?! That was very kind of them. Your biscuits look amazing!

  11. Would you mind sharing your recipe for your parsnip soup, please? I love parsnips, but have never had parsnip soup.

    1. Hello Mary, thanks for your comment. We just peel and chop roughly the parsnips and any other veg going in with it. You can boil/steam/sweat in oil until tender and then liquidise in a blender. Warm again to serve adding more water if necessary or milk/cream/greek youhurt to get the consistensy you want, also add salt, pepper, nutmeg to taste. Hope this helps:)

  13. Yes, we had enough soup for two lunches and the biscuits are very tasty, we took some with us this morning with a flask of coffee to have after our walk:)
